Chicken Pot Pie

Chicken Pot Pie
I make this for Shane quite often. It’s one of his favorite meals and his stomach can’t handle the frozen dinners (something to do with the preservatives). It’s super easy and delicious! I like to make things a little easier on myself and instead of buying and cooking and then cutting up some chicken breasts, I buy the Tyson Grilled N’ Ready Chicken Breast Chunks and just throw about a cup of them into the mix with my frozen vegetables.
Ingredients:
1 2/3 cup frozen vegetables
1 cup cut-up cooked chicken (or in my case Tyson Chicken Breast Chunks)
1 can condensed cream of chicken soup
1 cup Original Bisquick mix
1/2 cup milk
1 egg
Directions:
1. Heat oven to 400 degrees Fahrenheit.
2. In ungreased 9 in. pie plate stir together frozen vegetables, chicken and condensed cream of chicken soup.
3. In medium bowl, stir remaining ingredients (Bisquick, milk and egg) until well blended. Pour into pie plate.
4. Bake uncovered for about 30 minutes our until crust is golden brown.
And then you’re done! I love how easy this meal is and how much my husband loves it =)
Cost Per Ingredient:
Frozen Vegetables- $3.67
I buy store brand because we get a discount for working at our grocery store (convenient I know!). I buy two different bags though because the main bag I use only has celery, carrots, onions and potatoes. I mix in some peas to add a bit more to the vegetable portion of the pie.
Tyson Grilled N’ Ready Chicken- $7.47
I almost never buy this unless it’s on sale but I’ll list the full retail price. It’s just more convenient for me to buy precooked and ready chicken than to spend seven dollars on a 3 lb. bag of chicken and thaw, then cook, then cut up the chicken myself. Mind you I also use this chicken in other meals so the actual cost of it is worth it to me.
Cream of Chicken Soup- $1.00
Once again, I buy store brand and it works just fine. I stock up on this when it’s on sale too because I make chicken pot pie so often.
Bisquick Mix- ~$3.00
I don’t have to buy Bisquick often but I use it to make a lot of things (see Cheddar Bay Biscuit Recipe).
Milk- $1.25
Store brand and almost always on sale!
Egg- $0.89
I don’t really use eggs often so I only buy the half carton of eggs so I don’t waste them.
